SOUTHERN-STYLE GREEN BEANS & POTATOES

Ingredients:

2 slices thick-cut bacon, sliced into 1-inch pieces. 1 small onion, diced
1 clove garlic, minced 6 cups water
1 tsp chicken or vegetable base/bouillon 1 Tbsp Mama’s seasoning
1 tsp onion powder
½ tsp salt
1 tsp sugar
½ tsp black pepper
1 tsp apple cider vinegar
2 lbs frozen or fresh cut green beans

Place bacon pieces in a large stock pot. Cover over medium heat, stirring occasionally to render the fat but not completely brown, about 5 minutes, Add onion and garlic to pot, sauté for 1 minute. Add 6 cups of water as well as all the seasonings. Cover and cook on medium at a steady simmer for 30 minutes. Bring broth to a boil.
Add the green beans and vinegar. Bring beans to a boil, then lower the heat to medium. Simmer for 30 minutes.
Add quartered potatoes to pot. Cover and cook for 20 minutes, or until potatoes are fork tender. Serve as a side or a full meal with cornbread.
8 small new red potatoes— scrubbed and washed, quartered
